The origin of the name “Palmento” is uncertain; for most linguists the name derives from the Latin pavimentum (floor, pavement) on which the millstone turns, and even when palmento refers to the tank for pressing and fermenting the grapes, the reference to the floor of the tank returns, hard, stone. For others, however, it could derive from pavire (to beat), therefore the act of beating, pressing or even from palmes, vine branch. The pressing of the grapes and the fermentation of the must took place in the millstones. Even today, some families, very few to be honest, use the millstones to make wine, taking care to safeguard the structure and the tanks dug into the rock, keeping the history, culture and memory of rural civilization alive.
